I'm pretty sure I'm going to be using FCPX for the main editing
so I'm still unsure of the best way to bounce stuff between them.

Interplay between FCPX and other applications is still pretty immature. Although I think that CS6 might do it natively?

As for me, the only thing I know is how to edit iTunes movies and TV shows on Final Cut Pro and After Effects. When you import iTunes files to these two powerful editing video software, you will meet the error message that the imported files are not recognized by them.
But you can use iTunes Media Converter (https://www.drmare.com) to convert iTunes DRM M4V to FCP and After Effects compatible format. After that you can easily edit them on any video editor.
